Crispy-Chewy Nutmeg Oatmeal Lacies

Ah, January.  The time of year for snuggly fires and resolutions and planning beach vacations where your toes won’t freeze.  I always set a fitness resolution or two for the New Year and give it a few weeks to marinate.  Historically, the results from this approach have been a bit lackluster.  Throw in the fact that I’m headed to Hawaii next week and I’m thinking I need to jump on the fitness train with a little more vigor.

That’s why I’m thrilled to be partnering with Truvia (low cal baking sweetener!) and Bigelow Tea (tea!  TEA!  Need I say more?) to come up with a yummy, easy cookie to brighten up my mornings with a little sweetness.  I LOVE baked goods with my tea and decided that this Crispy-Chewy Nutmeg Oatmeal Lacy, with it’s low carb flair (75% less calories than sugar!) and spicy flavors would go perfectly with a big mug of Earl Gray.

You might be wondering what I mean by “Crispy-Chewy.”  Well, what we’ve got here is a cookie with crisp edges and a soft, chewy center.   Look at the bend in the center!

 And once you break it open, the chewiness in the center extends to a crisp edge.

 I adjusted the original recipe to allow for a couple modifications.  First, the batch needed to be smaller.  Then I needed to incorporate the nutmeg.  Lastly, I needed to add some Truvia Baking Blend.

 A few quick words on Truvia, in case you’re not familiar.  Truvia is natural, made from the leaves of the stevia plant.  You can buy Truvia in a no-calorie version, but I chose to use this blend because it bakes and crisps just like sugar- absolutely essential for this cookie.  Plus it’s tastes great and is gluten free.  (BONUS!  If you ensure that you’re using gluten free quick cooking oats?  This RECIPE is gluten free!)

Crispy-Chewy Nutmeg Oatmeal Lacies

Ingredients
  1. 1/2 tablespoon butter
  2. 1/4 cup Truvia Baking Blend
  3. 1 large egg
  4. 1/2 teaspoon vanilla extract
  5. 1/2 teaspoon ground nutmeg
  6. 1/8 teaspoon salt
  7. 1 teaspoon baking powder
  8. 1/2 cup quick cooking oats
  9. Vegetable-oil cooking spray
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment, spray with vegetable oil cooking spray.
  3. Using a mixer, beat butter and Truvia Baking Blend until crumbly. Add egg, vanilla extract, nutmeg, and salt. Beat until pale and smooth, about 1 minute.
  4. Mix in baking powder and oats.
  5. Let stand 10 to 15 minutes.
  6. Drop a spoonful of batter onto prepared sheet, 3 inches apart.
  7. Bake until golden, about 8-9 minutes.
  8. Transfer cookies (still on parchment paper) to wire racks to cool completely.
Notes
  1. Cookies can be stored up to 2 days at room temperature in airtight containers.

    I’m totally a tea drinker, too! Everyone else in the world can have coffee, but I will always want tea. 🙂 Those cookies look fab, and I’m a huge fan of cookies that can walk that crispy-chewy line!
