Crispy Cinnamon Granola (in Yogurt Parfaits!)

Since the crispy rice centers are so crunchy, they practically asked me to include them in a batch of spicy cinnamon granola.  The granola is so yummy on its own, but create the whole yogurt parfait for a knockout treat.  I’m pretty sure you’re going to become a fan.

First, head down to CVS and grab some of these M&M’s® Crispy.  In fact, pick up the big bag for the granola AND a little bag to make sure you have an easy snack for later.  I mean they’re right there together in the store- one in the candy aisle and one at the register- you’re checking out anyway!

To crush the candies for the recipe, I just put some into a plastic baggie and crush with the bottom of a glass jar.  I like bigger pieces so I can make sure I get a nice mix of granola, chocolate and crispiness.

Ingredients
  1. nonstick cooking spray
  2. 2 cups old fashioned oats
  3. 3 tablespoons light corn syrup or honey
  4. ¼ cup light brown sugar
  5. ¼ cup butter
  6. 1 tablespoon canola oil
  7. 1/4 teaspoon salt
  8. 1 teaspoon cinnamon
  9. 1/2 cup M&M's® Crispy, crushed
Instructions
  1. Preheat oven to 300 degrees. Line a rimmed cooking sheet with foil and spray with a light layer of the nonstick cooking spray
  2. Melt butter in the microwave or on the stovetop until just hot enough to melt and become liquid.
  3. Stir all the ingredients except for the M&M's® Crispy together in a large bowl and use a spoon to make sure everything is well-combined and the oats are coated.
  4. Spread the granola onto the cookie sheet in an even layer.
  5. Bake for 20 minutes, stirring once halfway through. Keep an eye on your oats and continue baking for five minute intervals until the oats are golden.
  6. Remove from oven and allow to cool for 5 minutes.
  7. Stir in M&M's® Crispy candies.
  8. Store in an air-tight container for up to a week.

YUM.  To make the yogurt parfaits, just add an inch or two of vanilla yogurt into a glass dessert container and continue layering until you’re done!

 I want another one already.

Do you use granola for any other tasty treats?  I’m open to ideas (like on ice cream, instead of breakfast, etc).  🙂

These yogurt parfaits look wonderfully addicting! Sean, be honest, how many did you eat? I’d definitely down more than one. And that’s just before lunch.
