Ah, the joys of having your best friend in town.  When Alyssa was here a few weeks ago we had double desserts and succulent dinners at our favorite restaurants and glasses of wine at lunch.  It was so delicious… and SO indulgent.

On her last night in town, we decided to cook at home and stay in.  Alyssa had an excellent idea for some tasty grilling and we all started brainstorming sides and desserts and extra things we absolutely had to make.  One of the requests?  A chimichurri sauce.  While it gave us both pause that Alyssa’s husband, Franklin, was interested in something Alyssa couldn’t remember making for him before, we went ahead and blended up a half-batch.  It turns out we were right: Franklin DIDN’T mean a chimichurri sauce.  Good thing it was delicious!  Sean ate it at every meal over the next day or two and I caught him scraping out the last few bits over some scrambled eggs.

All the sauce talk just highlighted a new life rule I’m adding to my list: Always have sauce.  Isn’t it a good one?

Mediterranean Turkey Pitas with Creamy Garlic Sauce | Alyssa & Carla

I’m a big fan of Foster Farms products (you might remember that we made a super tasty pasta with them a few months ago).  I love the brand because it’s so relevant to how I shop- for example, the sliced turkey I used for these pitas (Foster Farms All Natural Sliced Turkey) is free of nitrates/nitrites, 98% fat free and made from 100% turkey breast meat.  Along with those benefits, this version ALSO has 35% less sodium than the average sliced turkey breast slices, only 60 calories per serving and 11g of protein!  MMmmm.

First things first: let’s make some of the delicious sauce.

Creamy Garlic Sauce

Ingredients
  1. 1 cup sour cream
  2. 1/4 cup vinegar (I used red wine vinegar, but a cider vinegar would be delicious too!)
  3. 1/4 cup half and half
  4. 2 cloves garlic, crushed
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon pepper
  7. 1/2 teaspoon Italian seasoning
Instructions
  1. Mix all ingredients in a jar and shake until combined thoroughly.
  2. Shake well before using.
Notes
  1. Will last about 3-4 days in the refrigerator. The sauce isn't just yummy on pitas- it would be a great salad dressing too!

Now that your sauce is chilling in the fridge, gather all your ingredients for pita making.  This part is pretty easy.

  • Foster Farms All Natural Sliced Turkey (I like the Oven Roasted flavor), sliced into strips
  • pita bread
  • cucumbers (sliced)
  • lettuce (shredded)

(Tomatoes would be a yummy addition too!)

To assemble, take half of the pita and hold it open in the palm of your hand.  Spoon a tablespoonful of sauce into the bread and spread it around the inside.  Go ahead, use some more if you like.

Add lettuce first, then a row of cucumber slices and a row of sliced turkey strips.  I love cutting sliced meat into strips because it makes it so much easier to bite into without pulling anything too large out of the pita!

I consider one pita (two halves) to be the perfect size for a meal, so just split your recommended sliced turkey serving size of three slices evenly between the two sides.

Don’t forget to drizzle some more of that sauce right on top!

Since the ingredients are so easy, don’t feel like you need to make these ahead for a crowd!  The sauce tends to soak into the pita bread and make it a bit soggy if you let it sit around for too long.  I think this would be a great DIY style lunch with some friends over.

    How I love a good chimichurri sauce, but this creamy garlic sauce sounds just as good. I need to make this for lunch sometime.

    I used to be the person who liked a plain sandwich (GASP, I know!) but now that I am a little more adventurous I’m finding I do like sauces and spreads! I would definitely give this one a try!
